Sea, steppe and forest

The Strait of Magellan, the open steppe and the forests farther north create three distinct ingredient worlds. King crab and sea urchin speak of cold water; lamb reflects the pastoral landscape; morel mushrooms and native potatoes add seasonal depth.

A contemporary Patagonian restaurant does not need to hide those products beneath technique. Its role is to make them easier to understand while preserving their identity.

What to ask at the table

Ask what is seasonal, which dishes are designed for sharing and how long larger preparations require. This makes the experience more relaxed and helps the kitchen serve each product at its best.

If you are traveling onward to Torres del Paine or Antarctica, make your reservation early and allow enough time for dinner rather than treating it as a stop between transfers.
