Reservation only · Subject to availabilityThe fire begins early
Before the first guest arrives, the fire has already begun its slow work.

Image recovered from the private dining proposal.
Lamb, fish and vegetables meet the same flame at different distances. The asador reads the color of the embers and moves each ingredient only when the fire is ready.
Fire ritualThe lamb meets the fire when you book
When you reserve the lamb on the asador, the fire starts working four hours before you sit down.

A whole Magellanic lamb on the cross, slow-roasted over lenga and coihue wood with a touch of ancestral canelo. Four hours of patience so it reaches the table at its point. Each portion brings three cuts —French-trimmed chop, leg and medallion— and a trio of potatoes: gratinéed with sheep's cheese, filled with pebre, and gratinéed with cream and fine herbs. Ordered four hours ahead and served by the portion, for one to six guests.
By reservationThree cuts, one story
Rack, leg and shoulder reveal three textures of Magellanic lamb.

One fire, three textures.
The rack arrives browned and direct; the leg follows with a tender center; the shoulder closes with deeper flavor and fibres softened by long cooking. Purple potatoes carry the memory of the embers to the plate.

VegetarianThe sweet south
Warm chocolate, cold calafate and crisp pastry close the meal in three different rhythms.

Presentations may change with season and service.
The chocolate fondant releases a warm center beside cold calafate ice cream. Layered cake turns fruit and cream into a patient construction. Crisp southern pastries return the table to the familiar gesture of breaking and sharing.
Southern dessertsA legend from the southern steppe

Tradition says that whoever tastes calafate, the mythical berry of the southern steppe, will always return to Patagonia. Here, its flavor meets the ritual of mate, turning every pour into a journey to the end of the world. Let the spell begin.

Subject to availabilityThe threshold
Point Zero is not a dish. It is the moment when the outside world is left behind.

The experience begins before the first course.
A horse, a song and a personal welcome frame the threshold. Point Zero creates orientation before the menu begins: where the fire is, who is hosting and how the journey will unfold.
Speechless experiencePatagonia demands Your body leaves signals The table responds

An interactive and personalized dining journey. A voluntary check-in considers the guest's recent activity, perceived effort, preferences, allergies and dietary restrictions together with the seasonal ingredients available in the kitchen. The Speechless team confirms one of four five-course journeys: Drive, Recharge, Warmth or Balance. A final interaction closes the experience. Reservation only.

Subject to availabilityWild fruit
A small fruit opens the appetite with color, acidity and a sense of place.

Seasonal preparation subject to availability.
Calafate can begin the meal before it becomes dessert. Its deep color and lively acidity work as a welcome in a sour, a fermented drink or a small seasonal preparation.
Seasonal calafateObjects with memory
The bota remembers the road and the garrafa remembers wine poured for everyone.

Demonstration for adults and shared service by arrangement.
The leather bota turns a sip into a playful gesture; the glass carboy arrives at the center so wine can be shared without ceremony. Music, conversation and service complete the scene.
