personalised nutrition from your own signals, with a glucose sensor you take with you for 15 days
CLP 343,000 per person≈ US$ 348
A private table with OG37 technology. As you sit down, the house's biosensor ring reads your pulse and your heart rate variability; if you choose it, a FreeStyle Libre 2 glucose sensor that you wear for 15 days. Your digital twin shows on the screen how you arrive today. Gomni, the house's artificial intelligence, composes your liquid opening and your five-course journey with the weight of every dish calculated for you, from a pantry of wild products of the Strait, the steppe and the forest, and from the house's own fermentation workshop. The maître d', trained in personalised nutrition, confirms it with you. A second reading at 45 minutes and a report with your data. With the sensor, 15 days watching how your body responds to every meal, on board and wherever you go. Two to eight people, by reservation only.
Duration: 2 h 30 pier to pierDepartures: one a day, at 9:35Group: 2 to 8 people, private table, by reservation onlyFrom age 6, price per person. Under 6: free. The sensor, adults only.
The house's biosensor ring (as you sit down and 45 minutes after the table is served): heart rate and heart rate variability, beat by beat, in two minutes with your hand still. From the variability comes your flexibility for the day: high, medium or low. With high flexibility, the whole menu is open to you; with medium, protein at the centre and carbohydrates in moderation; with low, protein, vegetables, fibre and a touch of acidity, with the carbohydrate in a small portion and served last. It is what decides how much goes into each course of your journey.
Your watch, if you bring it: resting pulse and last night's hours of sleep. After a short night, the kitchen lowers the carbohydrate and raises the protein on your plate.
FreeStyle Libre 2 glucose sensor, if you choose it (included, adults only): you place it on your arm when you arrive and it measures your glucose every minute for 15 days, without pricking your finger each time. At the table, your curve enters your twin and your report from the second reading. And you take it with you: 15 days watching how your glucose responds to every meal, on board, on the excursion and at home, with your diary on your phone: you photograph what you eat, Gomni names it and matches it to your curve, and you receive your reports for days 1, 7 and 15 in your language.
How you arrive, in your own words: your energy from 1 to 5 and what you avoid (lactose, gluten, shellfish, nuts, egg, honey, caffeine, alcohol, adaptogenic mushrooms, vegetarian, vegan). Nothing you avoid reaches your table.

What Gomni does with your data
It crosses your reading, what you avoid, the time of day and the day's pantry, and composes your liquid opening and your five-course journey: opening, starter of the territory, vegetable, main and close. Each course comes out weighed for you, component by component: protein, carbohydrate, vegetable and fibre, fat and acid, with at least 25 grams of protein in your main and the order of service your reading calls for. The maître d', head of the dining room trained in personalised nutrition, reviews the proposal with you; the kitchen confirms and weighs it. Every journey follows one of four paths: Drive, before setting out; Recharge, after the effort; Warmth, for the cold and the wind; Balance, to return to the centre.

Full itinerary
The pier
14
We meet you at the exit of Muelle Prat. During the 12-minute walk the maître d' explains the protocol: what the ring measures, what the sensor measures if you choose it, what the screen shows, how your journey is composed and what you take with you. And asks what you avoid, so the kitchen knows before you sit down.
The fire
15
In front of the wood-fired hearth in the centre of the house, the story of the fire: the Aónikenk, the Tehuelche of the steppe, called aiken the stopping place where the march paused by the fire to regain strength before going on. This table is that. Then, the day's pantry product by product, from the Strait, the steppe, the forest and the fermentation workshop: the base Gomni will work with for you. What reaches your table is decided after you are measured, not before.
The reading
1617
At reception, the maître d' explains the Table and the sensor; whoever chooses it puts it on right there, on the arm. At your private table, reserved for your group alone, the maître d' places the house's biosensor ring on your finger. Two minutes with your hand still: the ring records your heart rate and your heart rate variability; from there comes your flexibility for the day. Your watch adds your resting pulse and your sleep. On the screen your digital twin wakes up, with your signals in real time. It is point zero: how you arrive today, measured, not assumed.
The decision
1819
Gomni crosses your reading with what you avoid, the time and the day's pantry, and composes your liquid opening and your five courses, weighed for you, along one of the four paths: Drive, Recharge, Warmth or Balance. The maître d' reviews the proposal with you, the kitchen confirms it and weighs every component. Your opening and your glasses come from the liquid menu: elixirs, satiety shakes, live ferments, infusions of the territory.
The response
2021
Forty-five minutes after the table is served, a second reading with the ring; with the sensor, your glucose curve from the table stays in your twin. The screen shows the before and the after. Your report stays on your phone, in your language, and the sensor goes on with you for 15 days: every meal you photograph, Gomni names it and matches it to your curve, and your reports for days 1, 7 and 15 arrive on their own. Mate with calafate to close and back to the pier with your all-aboard time in sight.
Questions
What exactly does it measure?
Heart rate and heart rate variability with the house's ring, as you sit down and at 45 minutes; resting pulse and sleep if you bring your watch; glucose every minute with the FreeStyle Libre 2 sensor, if you choose it, for 15 days.
What happens with the sensor after the table?
It keeps measuring for 15 days. On your phone you see your glucose in real time and your diary: you photograph every meal, Gomni names it and matches it to your curve, and you receive your reports for days 1, 7 and 15. You can stop sharing whenever you want; 30 days after closing, your diary deletes itself. The sensor's app depends on your country's app store: tell us your country when you book and we confirm that it works.
Is it a medical examination?
No. It is personalised nutrition at origin: the table measures and describes, and the kitchen responds. It does not diagnose, does not treat and does not replace your health professional. Every reading is voluntary and your report is yours alone.
